Passion for Kate's Cooking Corner - Fasolada

Hi there! Hope you are all having a fabulous start of the year. Guess what? Kate is back and for the first recipe of the year, she has prepared a bean soup called “fasolada”. This is an easy to make, tasty light meal and a great dish for vegetarians. Serve it with plenty of crunchy bread and feta cheese, and you are sure in for a great meal experience. Once the “fasolada” was ready and served, Kate gathered us for a feast and like a great hostesses she raised a glass of chilled white wine for good health and a great New Year! Ingredients

2 cups of dried white beans

3 carrots, peeled and sliced

3 onions, blended in a mixer

3 sticks celery, strings removed and sliced

½ cup of tomato paste

1 ½ cup olive oil

4 cups of water

Chili pepper for taste

Salt and pepper


From the evening place the beans in the water. In the morning drain the beans and place in a large saucepan. Cover with cold water and bring to boil for 30-45 minutes depending on the bean type. Drain the water, add all the ingredients and simmer for approximately 1 hour. Enjoy your meal.
