Lately I have become obsessed with
cooking! And although I’m on a strict diet of eating only proteins, I can’t get
enough of my newly found obsession, cooking! Recently my source of inspiration
has been the Mexican cuisine and to be more precise the Chicken fajitas. I have
decided to share my experimenting with you ( I am past the degustation stage as
I have hosted three dinners in a row before sharing the recipe with you J ) So here how it goes:
Ingredients
1chicken fillet
3 bell peppers, preferable different
colours
1 onion
1 garlic clove
Cumin
Olive oil
1 lemon
Chili pepper (approximately 1 tb
spoon)
Salt
Tortillas available in different
sizes. Usually I buy packets of 8.
Serves four
Chop the bell peppers into strips as
well as the onion. Finely chop the garlic clove. Cut up the chicken fillet into
small pieces, preferable strips. Place all the ingredients into a bowl, add the
spices and marinate for about 10 minutes before cooking. Sprinkle the olive oil
on the ingredients. Heat up the frying pan; I am using the wok as it cooks
everything perfectly. Empty out the ingredients and cook on a full fire for
about 6-8 minutes, turning the ingredients regularly. Careful that it doesn’t burn.
Lower the fire and let it simmer for a few more minutes before serving.
Toppings
Cut up some lettuce and place on a
separate dish
Slice up fine pieces of tomatoes, I
like to dice them
Place fat free Greek yogurt in a
separate bowl
Guacamole
One ripe avocado. If it is not ripe
the place it in a dark place for a few days. Chop up half an onion into small
pieces and one tomato diced. Mix the ingredients with a fork, pressing the
avocado until it’s even. Add lots of lemon, season with salt and pepper. Place
it into a bowl. I usually make two bowls and place them on each side of the
table.
This serving is more than enough for
two, if you are cooking a dinner for four then I recommend making another filing.
I usually also cook ground beef fajitas, which I will share with you next. Until
