Hungry? Start cooking! In my last
cooking post I showed you how to prepare the Chicken Fajitas, but if you are
expecting to feed a lot of hungry mouths then perhaps making two fillings is a
good idea. Here is the recipe:
Ingredients
1 kilo of minced beef
1 garlic clove or 2 depending on the
size
1 medium-sized onion, chopped
Chili powder, 1 table spoon
1 teaspoon each ground cumin and dry
oregano leaves
1 Large bell pepper or I used three
small ones
1 can of kidney beans, drained
Three medium sized tomatoes, chopped
into cubes, if you want you may also use canned tomatoes, but if you can get
fresh then better
Salt, to taste
Crumble the beef info a wide frying
pan over medium-high heat, and cook just until the meat loosed pink colour
(approximately 4 minutes), drain off any fat.
Add onion, garlic, and bell peppers
and continue to cook, stirring until the vegetables are soft ( approximately 10
minutes). Stir in the chili powder, cumin, oregano and tomatoes and bring to
boil adding the beans. Reduce the heat and simmer for about 15 more minutes,
stirring often to break up the tomatoes. Add salt to taste.
Guacamole
One ripe avocado. If it is not ripe the
place it in a dark place for a few days. Chop up half an onion into small
pieces and one tomato diced. Mix the ingredients with a fork, pressing the
avocado until it’s even. Add lots of lemon, season with salt and pepper. Place
it into a bowl. I usually make two bowls and place them on each side of the
table.
